Nina's Bread Stuffing (from "Love and Knishes")


4  cups stale bread, cubed		1/8 tsp pepper
2  tablespoons schmaltz or short-	1/8 tsp ginger
     ening				1/4 tsp poultry seasoning
chicken heart and liver, boiled		1   tbsp minced parsley
     and chopped			1   egg, beaten
1  teaspoon salt

Soak bread in cold water and squeeze dry.  Heat fat in a 
skillet.  Add soaked bread and stir until all the fat is 
absorbed.  Remove from flame.  Add heart, liver, seasonings, 
and parsley.  Stir in beaten egg.
