Nina's Minestrone

 

1/2 cup red beans

1/2 cup white beans

1/4 cup chopped onions

1/2 tablespoon minced garlic

1 bay leaf

2 quarts water

1 can (large) tomatoes

5 teaspoons salt

1/4 teaspoon pepper

Beef bones (marrow in them): optional- small piece of chuck

1 cup diced peeled carrots

1 cup potatoes

1 cup zucchini: optional- 1 cup of summer squash

1 cup string beans

1/2 cup elbow macaroni

1/4 cup chopped parsley

1 tablespoon basil

1 teaspoon oregano

Combine bones, white and red beans, onion, garlic, bay leaf, water, tomatoes, salt and pepper

Bring to boil

Skim

Cover & simmer 2 hours

Remove bay leaf

Skim

Add rest of ingredients.  Return to boiling point.  Cover and simmer another 1/2 hour.  Enjoy!
