One-crust apple-crumb pie: The pie can also be frozen and then baked, right from the freezer, at 360 for 90 minutes. The pies will keep a very long time in the freezer and not be worse for wear.
For home-made pie crusts with the convenience of ready-made, make a bunch of crusts when the mood grabs you, and put them in the freezer in a big plastic bag.
1 cup flour
1/2 cup light brown sugar
1/2 cup butter
Combine flour and brown sugar in a mixing bowl. Cut butter into this mixture until crumbs the size of small peas form. Cover pie with topping; use your hands to pat it on snugly and completely cover apples. Bake until deep golden brown, about 45 to 55 minutes.

1 teaspoon ground cinnamon
3/4 cup brown sugar
3/4 cup (1 1/2 sticks) butter
For the crumb topping, place the flour, cinnamon, and sugar in a large bowl and cut in the butter with a pastry blender or two knives until the mixture has the texture of coarse cornmeal. Sprinkle the crumb mixture on top of the apples.
