Apple Cranberry Pie by Chef Kevin M. Rice

Blake House Inn, Asheville, North Carolina  - - - Specialty Recipe



6 cups Granny Smith apples - peeled, cored, and sliced

2 cups fresh cranberries

2 Tablespoons butter, cut into pieces

1/2 cup sugar

1/4 cup flour

1 teaspoon nutmeg

1/4 teaspoon ginger

1 Tablespoon cinnamon

1/4 teaspoon cloves


Combine all ingredients in bowl and toss. Roll bottom layer of pastry and place in pie pan. Place ingredients in pie pan. Cover with top of pastry. Bake in 350-degree oven for 1-1/2 hours. Cool.

I just got back to my desk from the cafeteria, where I picked up a cranberry, nut muffin.  It occurred to me that cranberries and apples might be a great combination for a pie.  So, I went to the Ask Jeeves site...  and that's how I found your recipe.

My wife was a great cook and since she died three years ago and I've been trying my hand with her recipes.  I never baked a thing in my life before that, but I follow her recipes, and when I bring out her rolling pin my memory of watching her takes over and the results taste just like Nina's goodies.


Nina's apple pie is my all time favorite.  However, recently I've been experimenting with a strawberry-rhubarb filling.  I've been refining the recipe seeking that perfect sweet/tart taste.
