Nina's Chopped Liver (from "Love and Knishes")



1 pound liver (beef, calf, or chicken)

1 onion *

salt and pepper, to taste

2 hard-boiled eggs

2 tablespoons schmaltz


Place liver under broiler and broil until well done (about

10 minutes), turning once.  Remove from broiler and

cool.  Remove skin and veins.  Put liver, eggs, and onion

through a food grinder, using the fine blade.  Season with

salt and pepper.  Add schmaltz, working it through the

liver with a fork.  The liver should be moist enough to hold

together; if necessary, add more schmaltz. 


Serves 8.


* Some people prefer to sauté chopped onion in schmaltz

before adding to liver.
