Noodle Kugel, Fruit Cocktail

Yield: Serves: 8

12 oz package medium noodles
1 cup cottage cheese
1/2 cup sour cream (light or regular)
4 eggs (or 2 eggs plus 4 egg whites)
1/4 cup granulated sugar
1/4 cup brown sugar
1/2 tsp cinnamon
1/2 cup raisins
1/4 cup apricot jelly
30 oz can fruit cocktail, well-drained

Prepare noodles according to package directions. Drain and rinse well. Return noodles to saucepan. Combine with remaining ingredients and mix well. Place in a sprayed 9"x13" glass baking dish.

3 cups cornflake crumbs
1/2 cup butter, softened
1/4 cup white sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon

In a separate medium bowl, mix cornflake crumbs, 1/2 cup butter, 1/4 cup sugar, vanilla, and cinnamon. Spread over the egg noodle mixture.

Bake in a preheated 375°F oven for 45 minutes, until golden.
Serve hot with sour cream.

Freezes well.
