1/2 cup mayonnaise
1/4 cup grated Parmesan cheese
4 boneless, skinless chicken breasts (1-1/4 lbs)
4 tsp. Italian seasoned dry bread crumbs (or Panko)
Preheat oven to 425°.
Combine mayonnaise with cheese in medium bowl.
Arrange chicken on baking sheet.
Evenly top with mayonnaise mixture,
then sprinkle with bread crumbs.
Bake 20 minutes
After baking, drizzle with lemon juice
TRIM FOR EVEN THICKNESS:
Cut off the triangular tip of chicken breast and set aside
Lop of the smaller half of the chicken breast and set aside
Butterfly the chicken breasts
Add garlic powder and lemon-pepper to the mayo mix
Sprinkle extra Parmesan cheese on top of the bread crumbs
SET ASIDE PIECES
Repeat above steps to prep and bake the set aside pieces
Bake ~18 minutes
